橙香柚子戚風米蛋糕 cointreau pomelo chiffon rice cake

柚子節所以家裡好多的柚子....,嗯,照樣拿來亂亂做米蛋糕。

烤模:三能六吋深烤模 SN5142

蛋黃糊:
    蛋黃 5 顆 (好來多L蛋)
    椰子油 30 克
    君度橙酒 20 克
    柚子果肉 100 克
    蓬萊米粉 100 克

蛋白霜:
    蛋白 5 顆
    糖 60 克
    白醋 1/4 t
    香草精 1 t

烤溫:(我家烤溫偏高,實溫約多加個30度吧。)
    150/150 10分
    120/120 10分
    100/100 10分
    90/90 20分 (實溫約125左右)
    共烤約 50 分鐘。

我是用手持式電動攪拌棒打蛋黃糊的,是用打美奶滋的那支喔!
這個蛋糕放的是柚子果肉,所以務必打約 5 分鐘左右,纖維細一點口感比較好。然後不曉得是不是果肉纖維的關係,烤好後會縮到和入模時差不多高,所以用了 5 顆蛋下去做,這樣烤好還會是滿模狀態。我喜歡看它滿模啦。

輕乳酪米蛋糕 light cream cheese rice cake

其實這是冰到第三天晚上的狀態。因為有的沒的雜事,所以到第三天晚上才有空切開來拍照。怕忘了做法,趕快來寫一下。

烤模:6吋深烤模 SN5142

材料:
乳酪糊:
    cream cheese 300克 (好事多買的raskas )
    優格 150克 (自製無糖)
    檸檬汁 30克
    蛋黃 4顆 (好事多買的大蛋)
    米粉 80克 (自己磨的蓬萊米粉)
蛋白霜:
    蛋白 4顆
    糖 100克
    白醋一點點
    香草精 1t

做法:同戚風蛋糕做法。注意蛋白別打過頭。烤法同蒸烤布丁的概念。底部有鋪烤盤紙,邊邊我沒鋪,也沒抹油。(因為這烤模是分離的戚風模。)

烤法:把剛好滿模的蛋糕糊裝在十人份的電鍋內鍋,再裝在加了800cc 的冷水盤上蒸烤。(試過用熱水,移動時超不方便的 。所以後來都改用冷水烤。) 先用上火180度,下火100度,烤到表皮上色後再降溫。之後用上下火100度(實溫為120度),另在烤箱門上夾一支筷子,續烤至熟,共約烤3小時。(中間看情形覆蓋鋁薄紙避免上色過深。)

備註:
1. 沒加奶油。因為我覺得油量已經很夠了。蛋白打6、7分發就好,大約是提起呈直線約2、3公分滴落的狀態。千萬別打過頭,否則吃起來會蒼蒼的。
2. 米粉是我用新買的玩具磨的,(購自  http://www.baking104.com.tw/V2/products/1317620248.php ),沒辦法像買的水磨在來米粉和糯米粉那麼細,所以吃起來有微顆粒感,但整體而言還不錯。
3. 水盤裡的水高要達烤模約1/3 ~ 1/2 高度,不要浮起來就好。若不夠高,水盤裡的水會被煮沸,然後會一直聽到碰的一聲…。烤溫太高表皮會裂開,蛋糕長太高,常溫高度下降後口感不好;烤溫太低會烤到天荒地老…。(我想,女人青春有限…) 。
4. 烤到沒有搖晃感就好。若烤到蛋糕邊緣離模會有點過頭,因為蛋糕很厚不易散熱,所以會有後熟的問題。
5. 和布丁一樣,冷藏過後口感較佳。塑膠袋綁緊一點,否則會有好多水氣跑出來喔!同理,若差一點點的還不夠定型,可繼續蒸烤,或連烤模放在冰箱裡,袋子空氣多點,冷藏就會脫水較定型囉。

Big head bunny

Let's make some little bunny.

Tools: circular needle #0, DPN #0, crochet hook #0, sock yarn, toy eyes, filler, glue....
As usual, we will knit it from feet to head.  So, let's start with Turkish  cast on about 5 stitches.

Weird bear man

I saw this funny guy pop up on the Facebook. the strange weird twist move body style make me LOL. So, I decided to make a little this weird bear man. Below is how I make it, and I would use two different color yarn for you could see it better. (Or, the true is that's the only two color sock yarn I have now ....ha ha...) Enjoy your knitting!

Tools: circular needles number 0 (how long, m... very long...), some DPN number 0, crochet hook size 0 (1.8mm), some wasted sock yarn, and also you need a scissor, some filler cotton. m... toy eyes, glue..... 
I would knit this doll from the feet to the head. As usual, I avoid to sewing the project which skill I think there is no needs. So, lets start it! Use the Turkish cast on method starting with 3 loops. And, if you could, then do the two foot together for saving time.
